How To Cook for Two

This article is dedicated to all the folks
that are cooking for one or two. Yes, it seems
easier to stop and eat out or get take out; but
actually in my opinion it is not. With a little
planning you can fix your own meals, save time,
money and eat healthier. At least you will know
what you are putting into your body because you
prepared it. Now that the winter months are
almost upon us for most, the outdoor grilling
season is over. Now it becomes more of a
challenge to fix meals in the kitchen.

Knowing it's not a good idea to take things
for granted, I'm going to take a chance and
presume that everyone reading this article has
the basic kitchen with a refrigerator, stove,
oven and microwave. Maybe even a toaster oven,
George Forman grill or crockpot, but I won't push
it. My hope is that you will find it quick and
easy to prepare this recipe and when you have
eaten that last bite you will say to your self
that really tasted GOOD.

Turkey Tenderloins

1-1/4 pounds turkey breast tenderloins
1 tablespoon butter, or margarine
1 cup unsweetened apple juice
1 medium apple, sliced
1 tablespoon sugar substitute
2 teaspoons chicken bouillon granules
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon cornstarch
2 tablespoons cold water
1/2 cup chopped walnuts, toasted

Directions

In a large skillet, brown turkey in butter.
Add the apple juice, apple, brown sugar,
bouillon, cinnamon and nutmeg. Bring to a
boil. Reduce heat; cover and simmer for
10-12 minutes or until turkey juices run clear.
Using a slotted spoon, remove turkey and
apple slices to a serving platter; keep warm.
Combine cornstarch and water until smooth;
stir into pan juices. Bring to a boil; cook
and stir for 2 minutes or until thickened.
Spoon over turkey and apple. Sprinkle with
walnuts. Yield: 5 servings.
